    Ingredients
    • 64 oz Chicken BreastsWe cut 8oz chicken breasts in half
    • 6slices prosciuttoWe use this!
    • 2oz Asiago CheeseWe use this!
    • 1cup Frozen Spinach (Thawed)
    • 2tbsp Coconut Oil (For Cooking)We use this!
    • 6tbsp Olive Oil (For finishing)We use this!
    • Salt + Pepper
    Instructions
    1. Cut chicken breasts into 4 oz portions. Then butterfly each 4oz portion and flatten out with a mallet. (This is shown in the video above)
    2. Place 1 slice of prosciutto onto each piece of chicken. Evenly divide spinach and asiago cheese onto each piece of chicken.
    3. Roll up the chicken and place a toothpick through each piece to hold it together during cooking.
    4. Heat a pan over medium heat and add 2 tablespoons of coconut oil. When the oil is up to temperature add the chicken. Cook for about 30 minutes total. These take a while to cook due to their size, be sure they are cooked through.
    5. Drizzle olive oil over top when serving. Enjoy!
