Chicken Jalfrezi
Ingredients:
- 12 oz chicken thighs, boneless skinless
- 2 tsp cumin
- 2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
Sauce
- 2 tbsp ghee
- 1/2 medium white onion
- 1 tsp minced garlic
- 2 small peppers
- 1 medium vine tomato
- 1/2 tsp ground ginger
- 1 tsp cumin
- 1 tsp turmeric powder
- 1 tsp Pink Himalayan Salt
- 1/2 cup water
- cilantro (optional)
Instructions:
- Chop the chicken up into bite size chunks and add to a bowl.
- Add 2 tsp cumin, 2 tsp turmeric, 1 tsp coriander and 1 tsp garam masala and a pinch of salt and mix to combine using your hands. Make sure all the meat is coated. Set aside.
- Chop the white onion in large chunks, the tomato in to medium chunks and the serrano peppers into fourths.
- Heat your pan to medium heat and add a tbsp of ghee. Add in the chicken and cook through. Remove from heat once cooked through.
- Scrape up the pan once chicken is removed and add another tbsp of ghee. Add in the minced garlic and onions and allow to cook down and become tender, about 1-3 minutes.
- Add in the tomatoes and peppers and cook down for about 1-3 minutes.
- Add in the remaining seasonings of turmeric, ginger, cumin and salt. Stir to combine.
- Add in the water and turn the heat up and allow to reduce down, a couple minutes. Once the sauce thickens a bit add in the chicken and cook for an additional 3-5 minutes.
- Remove from the heat and optionally, toss in some cilantro and enjoy!
